I listened to the record last Wednesday on my flight to Los Angeles. Gave it one more go round before it went out into the world… one last little listen as being just mine. It’s brought me so much joy and company and peace, and I hope it will do the same for you.

Watching the city fall asleep to the sun, as she is tucked into her nightly sleep. The Earth makes her ritual journey to the other side. I’m just a witness to the company they keep.
Pistachio and herb crusted double lamb chop.
- Grilled and butter basted, finished in the oven. Set atop spring baby carrots and “new” potato’s. Red wine and balsamic reduction.
Bacon wrapped scallops
- U-8 Diver scallops. Pan seared and butter basted. Creamy polenta, tomato confit and a pesto quenelle
Hand cut, frenched pork chop
- Pan seared and butter basted pork chop. Potato puree, seasoned and pan seared asparagus. Topped with a Tomato compote. (Grape tomato’s, basil, EVOO, balsamic, salt and pepper.)
Free range, French cut chicken wing “lollipops”
- Braised in a Coke and ginger soy* liquid. Topped with scallion and placed on an English cucumber plate charger.
Asian Spring Salad.
- Napa cabbage, red cabbage, carrot, cilantro, green onions, red bell pepper, orange supreme’s. Topped with orange and lime zest, Toasted sesame seeds and dressed with an Asian inspired dressing. (Rice vinegar, Sesame oil, Dijon mustard (binder)
*Ginger soy liquid is, sesame oil, rice vinegar, soy sauce, ginger root, cilantro, minced garlic, green onion, jalapeno, (seeded) sriracha , honey orange and lemon juice.
